Our search for flavor, dept and connectivity between our techniques and produce is captured in one menu that changes throughout the year and by the available produce.
Due to the complexity and length of our menu we cannot accommodate every dietary restriction, preference or allergy. Vegetarian, vegan and fish allergies or dislikes ask for too many adaptions to our menu and are therefore not possible.
Shellfish/crustacean allergies and gluten, soy and lactose intolerances are possible, but only if cross contamination is not a problem.
We can not accommodate severe allergies to soy(sauce) and gluten.
On Wednesday and Thursday night we exclusively serve our omakase 'fundamentals' menu. This is a shorter and lighter version of our experience menu and costs €98.
On Friday and Saturday night we exclusively serve our omakase 'experience' menu.
This menu is always in between 13 and 15 servings depending on the season and costs €145 euro.
On Friday afternoon we serve a shorter version of the menu in a lunch service. This menu costs 85 euro and is usually served in 2,5 hours. The start of the lunch service is 12h30.
The menu can be accompanied with a pairing of wines and sakes.
A wine list is available for drinking by the bottle.
The price of the wine and sake pairing is €80 for 5 glasses and €55 for 5 half glasses. A non-alcoholic paring is also available for €65.
