
our story
Our restaurant Rizoom started as a pop-up ramen-bar called Shibui in January 2019 with the intention of closing after four months. Fortunately, we were able to extend our stay at Nieuwewandeling 62 so we decided to continue with a changed concept, changing Shibui from a ramen-bar to a izakaya style, japenese influenced restaurant with a fine dining approach.
An izakaya is a type of Japanese gastrobar in which a variety of dishes are served to accompany the (afterwork) drinks. The menu changes organically according to the seasons and there’s also an option to choose a fixed table menu that fills your whole evening. For lunch we serve a short lunch menu with small plates to share and an individual main course followed by dessert.
In January 2020 we officially opened our restaurant Rizoom stay permanently at this location. The izakaya-style menu made place for a tasting menu with seasonal produce and a focus on fish and shellfish processed with various Japanese and Scandinavian techniques. Expect a produce-driven kitchen with a lot of depth, which is achieved by working on wood fire and the use of ancient preservation techniques and condiments.
Lunch and dinner are accompanied by refined sakes and pure lively wines in an intimate but casual atmosphere.
